Healthy chicken nuggets

I know, I know. For many of us, changing our diet is hard because we are comfortable with what we know. Some of us might even say I enjoy my fries or soda to much to give them up. With that being said, I decided to post this recipe because one of my brothers guilty pleasures is McDonald's chicken nuggets. Since we have started this lifestyle change together about a year ago he has probably had chicken nuggets 3 times. Which is pretty impressive for someone that loves them so much. I would like him to kick the habit of processed, highly saturated foods completely so I decided to find healthier alternatives to his favorite fast food binge. I ran across this recipe on this site.

Taralynn’s Healthy Baked McNuggets
Calories: 160, Fat 4, Carbs 24, Protein 18g
3 Servings

Ingredients:
    2 large skinless boneless chicken breast
    2 teaspoons salt
    2 teaspoons pepper
    1 cup olive oil
    2 Cups whole wheat Italian seasoned breadcrumbs
    1 can cooking spray Original or Olive oil

Directions:
    Preheat oven to 375 degrees
    In a Dipping bowl add 1 cup of olive oil 2 tsp. salt and 2 tsp. of pepper and mix
    Cut the boneless chicken into 1in X 1in pieces
    Dip the chicken into the olive oil mixture then into the breadcrumbs.
    Transfer to a cooking sheet.
    Bake 16 minutes or until chicken is fully cooked
